Pilot Coffee Roasters 
Yonge & St. Clair

The new cafe location for Pilot Coffee Roasters, well known in Toronto for its large-scale roastery and well-serviced cafés, opened at Yonge and St. Clair in October 2023. Situated next to one of the TTC subway entrances, the café caters to both busy commuters and the local community.

Occupying a former bakery, the space is small, accommodating only a limited number of patrons at any given time. To address this, efficient circulation and clear wayfinding became essential to ensure the quality and speed of service that Pilot Cafes are known for. Upon entry, the layout clearly separates the green ‘fast’ service zone from the cream ‘slow’ seating area.

The coffee bar sits to the left, with a glass case showcasing house-made treats rising above the counter. After receiving their coffee, customers move to the canted green zone on the right, where a well-stocked condiment station and retail display are located. Meanwhile, the cream zone is reserved for seating. Cream coloured bar seating faces Yonge Street, while three square cream tables, arranged along a diagonal grid, are inward-facing. This strong diagonal layout was inspired by the existing architecture and echoes Pilot’s branding, particularly their folded airplane logo, which features triangulated forms.

Above the coffee bar, a cream, hanging veil mirrors these geometric shapes. Positioned along the diagonal grid, it helps fill the tall, narrow space, bringing the eye down to create a more intimate and comfortable environment.
